Bay (Laurus nobilis)

Bay is an evergreen tree, with shiny dark green, thick and leathery leaves, and shiny gray bark. In its native environment, the bay tree can reach up to 60 feet in height but usually only reaches 5 feet tall in pot culture.

Bay is indigenous to the Mediterranean region and Asia where it was widely cultivated. Its Latin name is derived from Laurus, which means laurel, and nobilis, which means famous. As its name suggests, the Laurus nobilis, or bay tree is a romantic herb seen as the symbol of glory, honour and greatness. In Greek and Roman times, wreaths of bay leaves were used to crown the heads of kings, poets and victors of athletic or scholarly contests.

Bay leaves have a pungent, warm aroma and flavour. In the kitchen, bay is used in nearly every soup, stew or tomato sauce. Instinctive in Spanish, Creole, and French soups, stews, marinades and sauces, it is a mandatory ingredient in a traditional French bouquet garni. The leaves are usually associated with long, slow cooking recipes. They are often used in stock while it is cooking and complements most vegetables and pasta dishes.
