Borage (Borago officinalis)

Borage is a self seeding annual which bears many leafy branches covered with fine hairs. The flowers, which make this a very attractive plant and one of the most photographed herbs, are azure blue and star shaped. It grows to approximately 3 feet in height.

Thought to have originated in the Middle East, borage is native to Europe, Asia Minor and Africa. Borage has a reputation for invoking courage and is traditionally associated with well being and good spirits.

Borage has a crisp and refreshing cucumber flavour. It enhances cheese, fish, poultry and most vegetables. It is also used in salads, iced beverages, pickles and salad dressings.
