There are several different varieties of mints, with the spearmint and applemint being some of the more popular culinary varieties. Most mint species are invasive perennials, with distinctive square stems. Mints can grow up to 2 feet tall.
Most mints are native to Europe and Asia. While peppermint does not seem to have been cultivated until the 17th century, spearmint is mentioned in Roman mythology. Its genus name Mentha originated from the beautiful nymph Minthe who was changed into a plant by Persephone, who was jealous of Pluto's love for Minthe.
Spearmint has a wide range of applications in the kitchen. With its distinctive mint aroma and pleasing light flavour that is not pungent, it brings an element of freshness to the foods it is combined with. Mint enhances all sorts of meat, fish and vegetable dishes, as well as cold dishes and drinks.
