| | | Garlic (Allium Sativum) |
Garlic is a hardy perennial. It is an onion with a compound bulb made up of bulblets called cloves that are enclosed in a papery sheath. It has very small flowers, and the plant grows to 2 feet in height.
While its origins are uncertain, it is thought to have come from Siberia and spread to the Mediterranean. Garlic, one of the oldest known cultivated plants, is associated with strength, speed and endurance.
Garlic is widely used in cooking and is important in most of the world's cuisines. When raw, it has a strong scent and sharp, onion flavour. When cooked, garlic is sweeter and less pungent. Garlic enhances cheese, breads, beans, broccoli, cauliflower, crackers, salads, stuffing, sauces, marinades, dressings, stews soups, meats, fish, poultry, game and pickles. In fact, about the only place in the kitchen where garlic is not used is in desserts.
We use organic garlic in our Barbecue Spice, Savoury Herb, Italian Herb, and Pesto blends.
