Oregano (Origanum spp.)

Oregano is an aromatic, herbaceous perennial, with hairy, square stems, and deep green leaves. It grows from 1 to 2 feet in height.

Native to the Mediterranean region, many of oregano's early uses were medicinal rather than culinary. While sweet marjoram was in use in the eighteenth century, some writers believe that oregano wasn't used in cooking until the Second World War.

Oregano has a hot, peppery flavour, and is often associated with tomato sauces. Oregano is frequently used in the cuisines of Italy, Greece, Brazil, Mexico, Spain, Cuba and Columbia. It enhances cheese, eggs, breads, vegetables, beef, pork, poultry, game and shellfish.
