Sage (Salvia officinalis)

Sage is a hardy perennial with wiry stems. It grows up to 3 feet tall. While there are over 750 varieties of sage, garden sage is the most common culinary type.

Sage is native to the coastal areas of the Mediterranean and southern Europe.  Its botanical name, Salvia, is derived from the Latin word salvere, which means to save or to heal. It was associated with longevity and credited with increasing mental capacity.

Sage has a lemony, pleasantly bitter flavour. It is a great accompaniment in salads, eggs, soups, marinades, meats and stuffing. It also goes well with fish, lamb, duck, tomatoes, and other vegetables. It is a traditional ingredient in mixed herbs.
