Rosemary (Rosmarinus officinalis)

Rosemary is a perennial evergreen shrub, with woody stems and leathery needle like leaves. The upright variety grows up to 5 feet tall while the low growing prostrate variety grows no higher than 12 inches.

Native to the Mediterranean region, its botanical name is derives from ros, which means dew, and marinus, which means sea, in reference to the Mediterranean areas where it grows. Even today, rosemary is best known as a symbol of remembrance, friendship and love. At one time, it was used in almost every wedding ceremony.

Rosemary has a pungent, piney, mint like, fresh savory flavour that enhances poultry, fish, lamb, beef, veal, pork and game. It also complements vegetables, especially potatoes, cheese, eggs and beans and is used in marinades, soups, salad dressings, cream sauces, and the French bouquet garni.
