Fenugreek is a small and slender annual herb, with tender stems and leaves that resemble clover.
Native to western Asia and the Mediterranean, it was once used to supplement feed for cattle and horses. It is known to have been one of the oldest cultivated plants with evidence dating from 1000 BC. Fenugreek's botanical name is a reference to its triangular shaped flowers, and foenum-graceum, which means Greek hay was the name given to it by the Romans.
Fenugreek has a nutty flavour, combining the taste of celery and maple. The seeds are commonly used in East Indian, Pakistani and African cuisines and are often included in curry spices, spicy pastries and potato dishes. The leaves have a unique flavour; they go well with vegetable and fish curries, as well as spinach, pea and potato dishes.
