| | | Lavender (Lavandula angustifolia) |
Lavender is a small bushy shrub with silver gray, smooth, pointed leaves. It grows to about 3 feet high.
Native to the Mediterranean region, lavender was known to the ancient Greeks and Romans. Its name derives from the Latin verb lavare, which means to wash, most probably because it was used by the Romans and Greeks to scent their bathwater.
Lavender has a camphor-like, piney and floral flavour, similar to rosemary. Since it is very pungent, it should be used sparingly in cooking. Lavender is found in the French herb blend herbes de Provence, as well as the Moroccan blend ras el hanout. It complements sour cream, jellies, salads and flavoured vinegars.
