| | | Thyme (Thymus vulgaris) |
Thyme is a small aromatic perennial shrub, with many branches. It grows to about 1 foot tall.
Native to the Mediterranean, it was used by the Egyptians in the embalming process and by the ancient Greeks as a fumigant. Its name has been traced to a couple of sources. One is that it derives from the Greek work thymon, meaning to fumigate. Another possible source for its name is the Greek word thymus, which means courage, an attribute that was traditionally associated with thyme.
Thyme has a slightly pungent and warming flavour, with a mouth freshening sharpness and faint clove like aftertaste. It is classified as one of the fines herbe of French cuisine and is used in salads, clam chowder and bouquet garnis. It complements veal, lamb, beef, poultry, fish, stuffing, stews, soups, bread, beans and casseroles, patés and pickles.
We use organic thyme in our Savoury Herb, Bouquet Garni, and Italian Herb blends.
